What We're EATING: Holiday Cookies

 

Oh the holidays! This year we were back in Boise with family for Christmas, which meant tons of parties, a (borrowed) proper kitchen, and an excuse to make dozens upon dozens of cookies! Here we share our two favorites with you. Happy baking! 

 
 

VANILLA BEAN CONFETTI COOKIES

The recipe for these confetti cookies is from Joy the Baker (recipe link below!) And they're maybe the most adorable, photogenic cookies in existence! They're friendly and bright and they disappeared SO FAST at every single get-together. We made a double batch and they lasted super well for four days in airtight containers.

CHEWY GINGER MOLASSES COOKIES

These cookies have my heart. ❤️ They're the perfect blend of chewy, rich molasses and spicy sweetness. We also whipped up a double batch of these guys, but I could have easily made it a triple batch and they still would have been gobbled up. It's a pretty straightforward recipe from Bon Appetit (again, recipe below) and these also do super well if you substitute Earth Balance butter to go dairy free. Enjoy!
